see my recipe under Breaded Tofu Tacos
Instructions
Cut the cauliflower into florets and dice the onion, then set aside
preheat oven to 400.
in a sauce pan, heat the stock, beer, garlic, tamari, hot sauce and lime juice. Add the cauliflower and simmer for 3-4 minutes, making sure to press down the cauliflower into the hot liquid.
While the cauliflower is cooking, mix the dry spices along with the avocado oil in a bowl.
With a slotted spoon remove the cauliflower from the pot and place into the bowl with the spices. Add the diced onion.
mix well until everything is coated.
Spread out onto a baking sheet and roast in the oven for 25-30 minutes. Check half way through and mix the cauliflower so it will brown evenly.
Heat the tortillas on a baking sheet or directly on the oven rack for 3-4 minutes. If you have a toaster oven that would be better since the oven might be too hot.
Assemble the tacos. Spoon about ¼c of the roasted cauliflower and onion onto a tortilla then top with ¼c of the slaw, fresh cilantro and a squeeze of fresh lime.
enjoy!
