watermelon lime granita

Refreshing and light, this granita is perfect for a hot summer day.
Ingredients
  • ½ medium watermelon, rind removed (about 24 cups)
  • 1 lime, juiced
  • ¼c organic sugar
Instructions
  1. Blend the watermelon, lime juice and sugar in batches in a high speed blender. You may have to pour the juice into a large bowl so that you can mix the batches together.
  2. Pour the juice into a 9x13 freezer proof baking dish and place it carefully into the freezer. Make sure that you can remove out easily and it is level. I didn't cover it, but you can with plastic wrap if you want to.
  3. hours later, remove it and scrape the top only with a fork. You will notice that the edges and corners will be more frozen. Try to only scrape the top layer. It will start to look like granita. Don't worry the parts that you scrape will stay that way...amazing, right?
  4. Put the pan back into the freezer and repeat this 2 or 3 more times, every 3 hours until all of the juice has frozen.
  5. Scoop out and serve.
Notes
*if the watermelon is super sweet you can leave out the sugar
*you can definitely make less in a smaller pan and it will take less time too
