In a food processor or using a potato masher, pulse or mash the chickpeas until they are coarsely ground.
In a large bowl, mix all of the ingredients together. Taste for seasoning.
Assemble the sandwich:
Toast the bread and spread with a little mayonnaise. Add the lettuce leaves and any optional topping that you like. Add a scoop of the chickpea carrot salad and top with the second slice of bread.
