chickpea & carrot salad sandwiches

Serves: 4 sandwiches
Ingredients
  • 1 can organic chickpeas, drained & rinsed
  • 2 carrots, peeled and shredded
  • 1T white wine or apple cider vinegar
  • 3T mayonnaise (I used vegannaisse)
  • ½t sea salt
  • ¼t cracked black pepper
  • 1T whole grain mustard
  • 1t hot sauce
  • lettuce leaves
  • 8 slices of your favorite bread
  • optional
  • sunflower seeds
  • sliced radishes
  • sliced cucumbers
  • sliced red onion
  • capers
  • crackers
  • whole lettuce leaves
Instructions
  1. In a food processor or using a potato masher, pulse or mash the chickpeas until they are coarsely ground.
  2. In a large bowl, mix all of the ingredients together. Taste for seasoning.
  3. Assemble the sandwich:
  4. Toast the bread and spread with a little mayonnaise. Add the lettuce leaves and any optional topping that you like. Add a scoop of the chickpea carrot salad and top with the second slice of bread.
  5. enjoy!
Notes
Taste for seasoning as you go and adjust according to how you like it to taste.
